According to Mr. Tran Van Phuc, Director of Binh Dinh Department of Agriculture and Rural Development, within the framework of the Binh Dinh Delicacies from the Sea Festival 2024, the Marine Essence Festival and the OCOP Product Fair, craft villages have left a beautiful impression in the hearts of people, domestic and foreign tourists. The main highlight of the culinary festival is famous chefs preparing dishes with the main ingredients being ocean tuna and Binh Dinh agricultural products.
“We invite talented chefs from Ho Chi Minh City, Japan and Australia to demonstrate how to dissect and fillet ocean tuna and process it into creative, nutritious and mouth-watering dishes. During the 5 days of the culinary festival, the organizers filleted 5 ocean tuna to prepare dishes to serve 1,500 free meals to visitors. Many people find it interesting to enjoy this dish in a very special way," said Mr. Tran Van Phuc.

From the first day of the culinary festival, people, domestic and foreign tourists have enjoyed participating in many exchange activities and experiencing diverse, rich and unique dishes prepared right at the festival. The dishes are elaborately and attractively presented by famous domestic and international artisans and chefs.
“This trip to Quy Nhon, I was fortunate to see famous chefs demonstrate how to prepare dishes from Binh Dinh ocean tuna. It's even better when I can enjoy free tuna salad, tuna sandwiches, grilled tuna skewers, tuna curry..., all delicious and unique dishes from famous chefs," said Ms. Nguyen Thi Bao Tram, a tourist from Ba Ria - Vung Tau.
At the table where the ocean tuna salad and spicy coconut sauce is prepared by Chef Kim Bernard Chilcott - Culinary Director of AL Frescos Group, domestic and foreign tourists could watch the chef's hands "dancing" on tuna slabs to create a unique tuna salad and spicy coconut sauce. He demonstrated and introduced dishes right at the counter, and happily answered visitors' questions about ingredients.

According to Mr. Kim Bernard Chilcott, the ocean tuna ingredients in Binh Dinh are exceptionally fresh and are filleted directly, not frozen, so there is a big difference compared to other places. He wanted to keep the sweetness of the fish, so he chose to make tuna salad combined with European ingredients such as unsalted avocado sauce and mayonnaise to increase the fatty taste and fresh crunch of the fruit and vegetable ingredients.
The success of the first culinary festival held by Binh Dinh was recognized for the organizing committee's idea of inviting famous domestic and foreign chefs to create and prepare dishes from ocean tuna ingredients. Over the 5 days of the festival, culinary culture lovers have the opportunity to share knowledge and secrets from famous chefs who have "breathed life" into the ingredients to turn ocean tuna into many delicious and unique dishes. Chefs of major restaurants in Quy Nhon also have the opportunity to learn how to process ocean tuna into unique dishes to add to the menu to serve customers.
